This new project from Sal Bednarz, who owns Actual Cafe right next door, has a hipster-friendly, vintage-industrial-shipyard aesthetic (with signage inspired by World War II propaganda posters) and a short mix-and-match menu that name-checks about a half-dozen farms and artisan suppliers. At Victory Burger, thick, compact patties are flame-grilled — the technique not so different from what a skilled backyard grill-master would do, but the results are beautifully consistent: Ask for your burger medium-rare, and out it’ll come, pink all the way through, full-flavored, and as juicy as the soupiest soup dumpling. A list of appealing add-ons runs the gamut from roasted garlic to an organic fried egg to decadent chicken-skin mayo. Meanwhile, vegan and gluten-free options abound; the smoky braised greens and the corn-based arepa “bun” are both well-worth checking out.
