The al pastor at this taco trailer is as good as they get: Spit-roasted gyros style, the meaty pork blackens around the edges where its spicy marinade caramelizes. You can get it layered inside a fat, griddled torta (sandwich) or spooned onto griddled corn tortillas and topped with salsa roja, onions, and cilantro. There's a reason the lot where Los Primos parks is rarely empty. Locals also stand in line for its slow-cooked carnitas and meltingly tender cabeza (beef cheeks).
