This kiosk in the renovated Emeryville Public Market aims to offer ramen that's as good, or at least nearly as good, as what you can find at a thousand different noodle shops in Japan — and to serve it quickly, with little fuss, and at a reasonable price point. In all those respects, Shiba Ramen more or less delivers. Highlights include a soy milk-based ramen featuring one of the richest, creamiest vegetarian ramen broths around, and a fantastic version of tantanmen: a mass of noodles in a thick, red-tinged gravy topped with spicy miso pork. If you’ve ever used the term “food court fare” as a slur — well, this isn't that.
