Re: “Soba Ichi Serves Impressive Handmade Soba Noodles — but the Setting Complicates Things

It was documented circa 1990 that there were some 40,000 soba shops in Japan. Even that number probably didn't include every little mom & pop soba shop or ekisoba place (fast, inexpensive soba stands in or near train stations). To keep prices low, most of these places use fresh but machine-made noodles. Serving only teuchi (handmade) soba at the Bay Area's first and only real soba restaurant is admirable but also questionable. I think the introduction of soba cuisine in the U.S. would benefit by affordability. Labor-intensive handmade (and house-milled) noodles could come along later, or perhaps alongside the more affordable option.

Never had any trouble dipping green beans or asparagus into anything!

Re: “AS B-Dama’s Chikara Ono Plots a New Sushi Restaurant in Swan’s Market

Ono-san, if you're reading this: I also hope you'll consider carrying some of the aozakana hard to find in many Bay Area sushi shops, especially kohada & katsuo. They're my favorites and also not high-priced. Wish we could get bozushi here too. Onegai shimasu! Good luck with your new venture.
