Swag's argument against coffee pairing is based on a false premise. While wine making is an art that was refined centuries ago, coffee has been a low quality product up until just the past few decades. Only recently have agricultural and processing improvements begun to produce a raw product that is sufficient to raise coffee to the level of a connoisseur drink. Although there may be other reasons why coffee is readily paired, the potential for pairing is certainly worth exploring and cannot be dismissed based on historical usage.
