This kitchen within a kitchen located inside the Firebrand Artisan Breads bakery is best known for the uniqueness of proprietor Jeff Mason’s excellent sandwiches. One popular sandwich features deep-fried Lao sausages and a yuzu-soy sauce mayonnaise; another combines olive oil-poached albacore tuna with gailan-like sprouted broccoli, slow-roasted cherry tomatoes, and, the crowning touch, a layer of potato chips. House-made pimento cheese gives yet another — a variation on roast beef — the decadent quality of a good cheesesteak. These are the kind of sandwiches you pull apart to figure out what exactly makes them so good — that might even inspire you to try to make better sandwiches yourself.
