Transform your kitchen into a “fermentation station” by learning to make your own miso at a workshop presented by Transition Berkeley at the Ecology Center (2530 San Pablo Ave., Berkeley) on Thursday. Instructor Wakana Kawamura will demonstrate various techniques for producing and cooking with the thick, salty, soybean-based, powerfully probiotic paste that is a traditional staple in Japanese cuisine.
