Los Rancheros, like all of Monument Boulevard’s Latino mercados, has a meat counter. Next to the butcher, a taco-maker. The tiny stall in back sells aguas frescas and licuados (fruit shakes) in flavors like plantain and melon, as well as tacos, burritos, and tortas on par with any taqueria on the strip. Skip the ceviche in favor of the chicken, al pastor, carnitas, or tongue tacos. Each three-inch round holds flavors so concentrated you have to let your palate clear between bites.
