Despite the saguaro-themed decor and authentic salsa music resounding against a chalkboard menu that includes carnitas, chorizo y papas, huevos revueltos, and other comidas clásicas, exotification is afoot here. That menu also offers curried-veggie burritos, tofu fajitas, peanut-saté-sauced Thai burritos, and roasted-eggplant "Mediterranean" burritos. La Cascada's offerings are smaller and a bit spendier than their counterparts at other burrito places, but they are expertly crafted and their flavors and textures merge lusciously.
