You're probably not going to see a vegan version any time soon. Bakesale Betty is busy enough with the limited options they have to not really care if they have vegan options. Unfortunate, but true. I believe their idea is to keep it simple, but good. In order to crank out a thousand sandwiches a day out of that tiny shop, they have to be efficient and keep things minimal. To add a vegan version would require another type of bread, a different process, etc. Just one more thing to think about for what they likely assume is a tiny fraction of their customers. If they sell 900 chicken sandwiches and 50 of the tofu ones a day that's roughly 5%. I would imagine they see vegans as an even smaller portion of their potential clients. Seeing as such, it would probably only net a 2-3% increase in sales for a much larger investment in a new product.

All that said, I can make you a vegan roll as good or better than Acme's, Bakesale Betty. I know it can be done, so if it is worth it to you, feel free to find me.
