An Italian-style pizza place in Emeryville's Public Market that aims to celebrate contemporary Italian culture.

Hot Italian is a case study in how a restaurant can maximize its use of a single ingredient — in this case head pizzaiolo Fabrizio Cercatore’s handspun pizza dough. The customizable mix-and-match menu allows you to put your salad on top of a pizza or to turn your pizza into a panini or a calzone — all using the same basic dough. It’s smart economics and also a bit of a gimmick, but fortunately Hot Italian’s thin-crust pizza is good enough to smooth over any wrinkles. Winners on the seasonal menu include the Cannavaro (a well-executed classic Margherita), the Ligabue (with pine nuts and pesto), and the Arcuri — a roasted-vegetable-and-goat-cheese combo that embodies the restaurant’s blending of Italian and Californian pizza traditions.
