At Popoca, a Salvadoran pop-up at Classic Cars West, Anthony Salguero combines traditional wood-fire cooking with progressive cooking techniques from the fine dining world. The pupusas are made with corn that Salguero mills himself every day, then stuffed with unconventional fillings like cauliflower, pork with almonds, or mushrooms, then cooked over the fire. He also serves rustic dishes like gallo en chicha, a sweet and sour chicken stew with fermented pineapple, golden raisins, prunes, and delicata squash. Popoca garnered a rave review from me last November, and if you haven’t made your way over to Classic Cars West yet, this Sunday is a great time to try it out and support a worthy cause. East Bay Eats has organized a fundraiser at Popoca supporting Rainbow Community Center of Contra Costa County, which provides well-being services to the LGBTQ+ community.
