Before the Spaniards arrived, indigenous Mexicans subsisted on mainly meatless diets. At the Piedmont Adult School (800 Magnolia Ave., Piedmont), a two-session cooking class focuses on vegetarian dishes from Oaxaca. At the session on Saturday, May 15, learn to make mushroom empanadas, nopales, and panuchos (bean-stuffed fried tortillas); on May 22, learn to make mole rojo and herbed rice. 10 a.m., $117.
