Oakland’s self-described “butchery restaurant” is a full-service butcher shop that handles whole, sustainably raised animals (broken down into recognizable cuts of meat on-site). It’s also a fully equipped restaurant — and when the deep fryers and immersion circulators get as much mileage as they do here, you aren’t just dabbling in sandwich-making. This is a smart business model: The kitchen staff is able to take hard-to-sell cuts of meat and turn them into delicious stews, sauce bases, and sandwich components. The cheese steak highlights thinly sliced beef sirloin, often overshadowed in the hierarchy of steaks; the double cheeseburger makes use of assorted extra trim, which helps boost the patties’ fat content up to a decadent 25 percent. Sides, for the most part, are similarly meat-centric — the chili and the beef tallow fries are both excellent. Don’t sleep on the salads, though: One that featured marinated beets, pistachios, and pickled watermelon rind nearly stole the show.
