Though the sign on the door says “Persian sandwiches,” Chopan Kabob’s owners come from Afghanistan. Think of the tiny bill of fare in this tiny restaurant as the greatest hits of kebobdom. Each kebob comes off the grill lean, pink-centered, and flavorful. (If you have just one to eat, pick the namesake dish, bone-in chunks of lamb crusted in spices and ground sumac.) For the Persian sandwiches, the cooks wrap grilled meat with vegetables in a tortilla-thin flatbread.
