For folks who spent their formative years in New Jersey, the Taylor Ham, Egg, and Cheese is the king of all breakfast sandwiches, and a source of unrequited nostalgia — at least until it became a fixture on the daily specials menu at Scolari’s Good Eats. Scolari’s’ version has stellar building blocks: a toasted challah bun, high-quality cheddar cheese, an outrageously runny fried egg that’s cooked until just set and still quivering, and all the traditional condiments (salt, pepper, ketchup). And the star of the show: several slices of well-griddled Taylor ham — a salty, über-creamy processed pork product that any Spam lover will adore. Our only complaint is that Scolari’s never opens earlier than 11:30 a.m., meaning this is a breakfast sandwich we have to eat for lunch. But who are we kidding? We’ve happily eaten this so-called “Jersey Breakfast” for dinner more times than we can count.
