According to national industry leaders, amaro is poised to make a big comeback soon. The East Bay can get a sneak peek before the Italian herbal liqueur blows up at Gio's Pizza & Bocce, which stocks an astonishing variety of amaro — and vermouth. (Amaro is made from grain-based alcohols and usually consumed after dinner, while vermouth is wine-based and typically poured before a meal.) The collection spans new styles from local distillers as well as vintage labels dating back to the pre-Prohibition era. Try them straight-up in an amaro flight, which comes with an educational history lesson, or in one of the bar's creative cocktails.
