In this terrain of exemplary bakeries, choices abound when it comes time to picking a cake-maker for the “big day.” Masse’s Pastries has a strong following, and for good reason. Owner Paul Masse honed his skills as pastry chef at a very “old-school” institution — the Ritz Carlton, in Boston and San Francisco — before opening up his own shop. What sets Masse’s Pastries apart from the crowd is that Paul’s breathtaking works of art are equally as delicious as they are beautiful. Think elaborate sculpted chocolate, silken waves of frosting, caramelized filigrees, and candied flowers that trick the eye they look so real. And inside of it all is not the bland, sugary sponginess that you might expect to find underneath the fluffy pretense of many wedding cakes. Intense flavors like chocolate orange and pear caramel, made with the finest of ingredients, surprise and delight. Just as delightful as the cakes are Masse’s owners — Paul and his wife Marcia. Paul’s love of his work is evident in his enthusiasm about each baking project. And Marcia’s easygoing manner relaxes even the most anxious brides and grooms to be.
