David Samiljan remembers when his great-grandfather ran Baron’s Meats & Poultry in Brooklyn when he was just a child. After years as a chef, Samiljan decided to revive his great-grandfather’s legacy and opened his own butcher shop of the same name. Baron’s offers sustainably raised meats: pork, beef, chicken, turkey, goat, lamb, bison, rabbit, and more. Some of the brands available include local Marin Sun Farms, Niman Ranch, Mary’s Free-Range Turkey, and Creekstone Farm. Although not all of the meat is organic, the baseline standard at Baron’s is that it “has been raised humanely with little impact to the environment.” Baron’s hand-makes its own sausages — you can watch it happen at the counter — using fresh herbs and spices. What makes the place so heavenly, though, is David’s warmth, knowledge, and excitement about working with customers on their sustainable eating choices. Ask him, for example, about going in with other customers on a whole or half hog.
