If you’re a Chinese-food freak and love a good glass of wine, sommelier
Nick Liang of Uncle Yu’s at the Vineyard is your man. Nick’s mantra is
to match with the sauce, not the sauced. Depending on the flavorings,
you may be better off drinking a red with the fish and a white with the
beef. And, no offense, his recommendation is not likely to come from
California. Nick is more likely to fix you up with something from
Germany, Alsace, the Loire Valley, or the Rhone. Uncle Yu’s specializes
in (mildly) spicy Szechwan cuisine, and, in his opinion, California’s
high-alcohol, oaky stuff just doesn’t flatter the flavors. On the other
hand, he’ll tell you that German wines are just about the best for
pan-Asian foods. Half the fun of dining at Uncle Yu’s at the Vineyard
is Nick’s offbeat wine list, something shared with a sister restaurant
in Lafayette. But if you want tableside service from the master, you’ll
have to make the trek to Livermore.
