The restaurant, a carefully remodeled 19th-century train station, combines New California and Old California flavors aptly enough that you won’t rue the steakhouse prices you’re paying. And the wine list is almost as long as The Brothers Karamazov. Send in a request beforehand and you can sit in a beautifully restored 1905 Pullman dining car.
