Ana Maria Campos’ birria, posole, and menudo are a holy trinity making this immaculate little eatery a worthy shrine to Jalisco mom cooking. Officially available on weekends only, the iconic soup-stews are usually available all week. Campos’ skill shines in rich, carefully made broths, good enough, for instance, to stand up to birria’s dark, smoldering filter of goat meat and chiles. Posole is tasty even before you load on condiments like oregano and salsa picante, and Campos’ chile-free menudo blanco offers buttery slabs of smooth tripe in a matrix of semiclear broth.
