Rumbo al Sur is the long-anticipated pan-Latin experiment from Chef Matt Colgan of critics’ darling À Côté. But after eleven years working in Mediterranean tapas, Colgan’s foray a new ethnic cuisine has mixed results. He is light on the spice, trying to appeal to a broad range of palates. Much of the resulting fare hews bland, though top-shelf dishes like the chiles rellenos and pozole verde hint at Colgan’s potential. For sleepy Glenview, Rumbo al Sur is a needed shot of adrenaline. Locals pack the spot even on early weeknights, basking in a lively club-like vibe.
