This Taiwanese restaurant is strictly DIY. At the center of each table is an induction heat pad. You pay $4 a person for a bowl of broth, then purchase ingredients à la carte to cook in it: thinly sliced raw meats, fish cakes and dumplings, mushrooms, vegetables, glass noodles, and spongy frozen tofu. Many diners order a combination hot pot — a half-and-half bowl with one side containing a thin chicken stock and the other a potent mala (spicy and numbing) broth.

Hours: 11:30 a.m.-2 p.m., 5 p.m.-10:00 p.m. Mon.-Fri., 11:30 a.m.-10:00 p.m. Sat.-Sun.
