Lois the Pie Queen

Lois may have passed on to heaven, but her marvelous luncheonette still delivers the pies that made her famous. While she lived, Lois was the sort of chef who "cooked like Jesus." She always had enough to feed a crowd and sometimes toiled nights baking pies for community events. Sweet potato, apple, mixed berry, and lemon icebox are among the flavors she made that are still on the menu today. The sweet potato pie, the most popular kind, is dense and delicious. You can tell it's made from real sweet potatoes and it has the perfect touch of spice. The apple pie comes with a sugar-topped crust. The apples have a nice, firm bite -- again, it's clear these pies are made with quality ingredients. The lemon icebox pie is rich and creamy with a solid, puckery finish, its lemony tang well balanced by the cookie crust. Lois grew up in a church tradition where multiple desserts were the norm, so she also knew her way around a cobbler. Peach cobbler remains a cherished dessert at her namesake establishment. Slices of pie and cobbler sell for $3.50 to $4. Whole pies are $12.50.
