Visually, Herbivore defies every cliché of the veggie eatery in a college town — there isn’t a fern or redwood burl tabletop in sight, only hard surfaces and a Dwell magazine sleekness. But the multiculti menu is classically crunchy, including an emphasis on mock-meat proteins and an old-school tendency to overseason with dried herbs. When a dish like shish kebab gets it right — the grilled vegetables undergo some alchemy of natural sweetness and smoky char — Herbivore can feel like veggie bliss.
