Guilin, a city in China’s Guangxi province, is more famous for its scenery than its food, but Guilin rice noodles are the one dish that’s known throughout China. The dish — a deceptively simple combination of noodles, meat, pickled vegetables, and broth — is said to date back some 2,000 years. But here in the United States, it’s almost completely obscure, making Oakland Chinatown’s Classic Guilin Rice Noodles a must-visit destination for anyone interested in regional Chinese cuisine. The titular dish features spaghetti-like white rice noodles, your choice of five different meats, roasted peanuts, minced garlic, pickled longbeans, a salty seasoning liquid, and a bowl of barely seasoned beef broth on the side. Other interesting offerings include Liuzhou spicy snail soup; jumbo-size lotus leaf wraps; and thick, nutty grain soy milk.
