After a long, rich and (perhaps over-) satisfying meal, all you want to do is kick back, digest, and rid your taste buds of all those accumulated flavors. Rabelais thought crisp greens worked best for “scouring the maw”; others opt for candied ginger, hot tea, parsley sprigs, a tart apple, or a snifter of Calvados. Our favorite palate cleanser is a light, crisp, brightly flavored sorbet, the perfect antidote to an overloaded lingua and a full-to-bursting belly. Zut!’s house-made version of the frozen dessert is exemplary. The season’s ripest fruit (summer strawberries as of this writing) are puréed with a bit of sweetened water, then chilled until cool and refreshing. The result tastes like freshly plucked fruit distilled to its bright essence. Served with bits of candy-sweet berry and a stomach-soothing ginger cookie, it’s a delectable way to scour the maw. (Zut! has a full bar as well, so you could always complement the sorbet with some of that Calvados.)
