These few restaurant owners are making things up in order to attempt to portray compassionate persons as violent, and themselves as victims (though the only victims are the birds being tortured for them). Just as the activists promote compassion and non-violence toward non-human animals, they want the same for humans. The only conflicts are when customers, passers-by, or security personnel harass or assault the protestors (interfering with their free speech rights under federal and state constitutions).

Foie gras is so obviously horrifically cruel that a state ban was necessary to protect these animals. It's disturbing that a few people would try to fight and defy the law, and even seem to relish and celebrate the extreme cruelty involved in its manufacture.
