It's really too late to argue the points Kevin has made here. The "cult of the barista" or espresso is off and running.
I think I know which Kevin this is and I respect him very much for his contribution to coffee in the US. Still, it worth looking at all of this with fresh eyes. It has not been a stagnant market...not by a long shot.
His points about Italian espresso are understandable, but American espresso makers seldom follow Italian rules anymore.
So funny that Stumptown was singled out as one that has learned from those that came before. If you ask me, we all have learned a great deal, and I'm not being snarky when I say that. I've been in the business 25 years.
