Great article. ..I am an ethical vegan and love to find out as much as I can not only with food but drinks. I am also a Peruvian and even though I had veganixed..many dishes I have not yet find an ingredient that makes the foam on Pisco sour..don't tell me beer because that gives it an orangey color NOT typical in Pisco sour...any other suggestions?

It is not really that hard to make a good milk tea at home. I use Rickshaw Ceylon tea, boil in fabric strainer with eggshells for 15 minutes, pour over evaporated milk and sugar. Add condensed milk to taste.

A couple corrections on this article: DC and Lisa, owners of The Punchdown, are not married. Chris of Broc Cellars last name is spelled Brockway, Mike Dashe and Steve Edmunds also make natural wine in the East Bay, and Camino has an excellent wine list that includes many natural wines.

Readers may also be interested that years before Fairtrade existed, we imported almost 3 tonnes of instant coffee from Tanzania to the UK to help support manufacturing in the Third World. Swag's argument against coffee pairing is based on a false premise. While wine making is an art that was refined centuries ago, coffee has been a low quality product up until just the past few decades. Only recently have agricultural and processing improvements begun to produce a raw product that is sufficient to raise coffee to the level of a connoisseur drink. Although there may be other reasons why coffee is readily paired, the potential for pairing is certainly worth exploring and cannot be dismissed based on historical usage.

Please be aware of your language. Stating that "Rosemary Collins — a transgendered Tom Collins" is a transphobic statement, shows a lack of knowledge and respect for the the transgendered communities and is unnecessary. Having statements such as this in newspapers makes it appear acceptable to the general public and is not ok.

The French, the Italians, and even the Persians ... they all have centuries of historic wine-making and long-standing traditions of wine pairing with the local food. But when we look to the original coffee cultures of Ethiopia, Yemen, Turkey, etc. - the concept of food pairing is alien and all but absent.

Is this by accident? Hardly. But some people have got it in their heads that if you are particular about the origins and production of what you consume, you must shoehorn it into a wine equivalent -- which means doing ridiculous things like coffee pairings. We like a good cigar too now and then, and there's a reason why cigar pairings with food are also not present in history.

Fortunately, curious novelty fades and common sense prevails. In the meantime, I suppose this is mankind's way of trying to recreate the events that lead to the first humanoids that ate artichokes ... or who removed the seeds from coffee cherries, burnt them, crushed them, and suddenly thought brewing that with water was an interesting idea. Coffee pairing will undoubtedly never make it any further than it did with our ancestors centuries ago.
