.Healthiest Slow Food: Magicians turn porridge into pizza crust

Cafe Gratitude

A pizza crust that bakes for 24 hours? Talk about slow. But you can put “bakes” in quote marks — Cafe Gratitude’s crackery crusts start as puddles of buckwheat-
and-sunflower-
seed porridge. They’re some of the tastiest things to emerge from the dehydrators at the Berkeley branch of the hippie-trippy, raw-foods mini-chain. Sure, this restaurant takes getting used to: Entree names read like Stuart Smalley affirmations, and tableside birthday sing-alongs have the blissed-out flavor of Deadhead jams. But the food can be good enough to make you work up a little cultlike fervor, even with lists of ingredients trapped in quotation marks. I Am Passionate, a pizza, sports dollops of cashew-milk “ricotta” and bits of Brazil-nut “Parmesan.” The freaky-good desserts are less imitative. Try I Am Magnificent, a vegan chocolate mousse with a flawless texture, or I Am Innocent, a banana split built around date-and-nut-milk soft-serve. Brothers and sisters: Close your eyes and feel the sparkly magic.
