Once upon a time, Henry Ford said you could have your car in any color you wanted as long as it was black. The Pizza Collective has a similar philosophy: You can have any kind of pizza you want, as long as it’s the one vegetarian pizza they’re making today. The good news is that — no matter what they’re making, even when it includes Gorgonzola or eggplant or potatoes — it is simply the best pizza you’ll taste. These are celestial pizzas for the gods. But don’t take our word for it. Just ask any of the hundreds of folks who make the pilgrimage daily. You can see them having picnics in the middle of the Shattuck median strip. You can see them parked at the tables inside and outside this teeny-tiny pizza parlor. You can see them lined up, blocking the sidewalk and scurrying off to their cars, pizza boxes in hand. The selection is limited, but the quality is exceptional. Pizza $2 a huge slice. Upscale imported soft drinks $1.25. Microbrewed bottle beers $1.75. Great glass of wine $2.50. It’s lunch. It’s dinner. It’s good.
